Prepare the Vegetables

Peel and cube the potatoes into 2cm pieces. Slice the leeks in half lengthwise, wash thoroughly to remove any grit, then slice into half-moons. Dice the carrots, celery, and onion.

Sauté the Aromatics

In a large pot, melt butter over medium heat. Add onions and cook for 3-4 minutes until translucent. Add leeks, carrots, and celery. Cook for another 5 minutes, stirring occasionally.

Add Potatoes and Broth

Add minced garlic and cook for 30 seconds until fragrant. Add the cubed potatoes, bay leaves, and marjoram. Pour in the broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes.

Check for Doneness

The soup is ready when potatoes are fork-tender. Remove the bay leaves. For a chunky soup, mash some potatoes against the side of the pot. For a smoother texture, blend half the soup.

Finish with Cream

Stir in the cream and freshly grated nutmeg. Season with salt and white pepper to taste. Simmer for another 2-3 minutes to let the flavors meld. Don't let it boil after adding cream.

Serve

Ladle into warm bowls. Garnish generously with freshly chopped chives and parsley. Serve with crusty bread for a complete meal. A swirl of good olive oil on top adds a lovely finish.
